Our weekly meal plan

Last weeks meal plan went well. I am really enjoying trying new things from the Gousto boxes. Who'd have thought that peanut butter would taste so amazing on a burger, we were not a fan of the gnocchi though. I didn't like the texture but still ate it. Now that I have made the recipes once using the Gousto ingredients I feel like I can recreate them myself, following the recipe of course but maybe without all of the green leafy veg. The kids are so over green leafy vegetables at the moment. lol

Today is the first proper day of the Easter holidays and apart from school shoe shopping today for Ellie I don't have much planned for this week. Ellie has also asked to do some baking so we will be this week. I am expecting a lot of lazy mornings and relaxed days for the next few weeks and I couldn't be happier, I just hope the weather is a bit nicer than the end of last week. Snow in the winter is fun, not so much at this time of year.

This week we are getting another Gousto recipe box as there are more recipes that I would like to try. It will be the last one for a few of weeks as there is nothing standing out to me on the meal choices for the coming weeks. On the menu this week we have:

Monday - We will pick something up in town. Subway sandwiches of pasties from Greggs. 
Tuesday - Gousto - Black pudding sausages with colcannon and apple sauce.
Wednesday - Gousto - Beef Doner with chilli sauce and chips.
Thursday - Gousto - Bolognese Ragu sauce with mushroom tortelloni.
Friday - Gousto - Sausage & mushroom pizza with garlic & herb dip.
Saturday - Hot dogs in buns with fries.
Sunday - A roast dinner of some sort.

I want the sunshine back. #MySundaySnapshot

Last weeks photo was a lovely spring photo and this weeks seems like it should have been taken in the middle of winter. We have had some snow, not enough to settle on the ground but on Thursday we woke to it on the roofs and a tiny bit on the grass. It snowed off and on all day but inbetween the flurries of snow the sun did come out to melt it. It was bitterly cold and still is which isn't great with the cost of gas & electricity going up. I am hoping the sunshine and warmth comes back soon just to save us a bit of money on the heating.

Week 13 of #Project365. 26th March - 1st April. A photo every day for a year!

I have been in a bit of a grump this past week. Partly down to feeling tired and partly because of the weather. The sunshine last week was amazing and now we have this! Rain, cold and snow! Hmmf. I am really fearing for my little plants in my mini greenhouse. I found myself doing a lateral flow test on Monday as I wasn't feeling too great but it seems it was just hay fever.

We have finally reached the Easter holidays, hooray and we have a few plans, well the kids have more planned than I do. I will be sat at home twiddling my thumbs while they are out with friends. lol I suppose that is the joys of them getting older, they don't want to spend time with their mum. Hmmf.

85/365 - 26th March
We went to our local auction and of course stopped of in the cafe for something to eat and drink. It was slushies all round as the weather was so nice. I didn't get much of what I had my eye on in the auction but did get 2 sun loungers with the cushions on and just a frame for £16. I thought I would get some use out of them but the weather had different ideas.

86/365 - 27th March
I had a lovely Mother's day. I had the kids running about after me and I was spoilt rotten. I got chocolates, flowers, bath stuff, some little ornaments, a rolling pin and of course some cards.

87/365 - 28th March
Another Gousto meal. Chunky cottage pie. It was so good and it's another meal which I will be making myself in the future.

88/365 - 29th March
We have been sent a couple of games to try out and we knew we already loved Dobble but I love this Harry Potter version even more.

89/365 - 30th March
The weather forecast on my laptop warned that it was snowing, it wasn't. Not on Wednesday anyway, we just had rain. It was bitterly cold though, I want the sunshine back.

90/365 - 31st March
We woke up to snow on the roofs then it snowed off and on most of the day. It didn't settle though. Snow is fun and exciting in the winter but not at this time of year.

91/365 - 1st April
I had an amazing delivery of cupcakes and doughnuts on Thursday and I enjoyed another doughnut with my lunch yesterday. There will be a blog post all about the tasty treats coming soon.

This week my Word of the Week is: Tired! #WotW

This week my Word of the Week is:

tired

I have felt tired all week. I am totally blaming the clocks changing over the weekend and losing that hour of sleep. Stu left me in bed on Tuesday morning and it did help but I still feel like my body clock has been messed with. There has been evenings when I've lost all track of time and we have eaten late, then the evening flies over and by 9pm I feel tired and I'm ready for bed. I think it's because I am waking earlier with it being lighter on a morning, at least the birds are not waking me up yet. 

Becky finished her night shift on Saturday morning had 4 hours sleep and then decided to join us at our local auction. She was only there for a burger from the cafe but it was such a gorgeous day she felt it would be wasted staying in bed. She was happy she came but tired by about 3pm so she went for a nap. At the auction she did see one of her favourite people, he's such a character and actually ended up bidding on the sun loungers that we were bidding on, as soon as he saw we were bidding on them he dropped out and let us have them. We got 3 sun loungers for £16. I had planned on lazing on them this week but the weather has been stupid. Stupid as in this time last week I was in a vest top, sat in a beer garden, roasting and as I was writing this I was watching snow fall. 

I did think on Monday that I was coming down with a cold or could have caught Covid, I felt achy, snotty and like I could sleep for a week. I took a test just in case and it was negative but by late afternoon I felt much better. I felt the same on Tuesday too. I am thinking it's a bit of hay fever because the kids were feeling the same. I am tired of hay fever all ready and we have months of it to come yet. Eek! 

It was Becky's pay day yesterday and when she got her payslip earlier in the week she was already planning what to buy. She frustrates me so much, she's never had as much money and I think she is wasting it buy buying takeaways when she is at college. £30 on Just Eat a week is just silly and buying things that she uses once and then they get put to the side. I am tired of telling her to save. I know she has the rest of her life for that but if she got into the habit of it now when she doesn't really have bills to pay it will become second nature in the future.

Today is the start of the Easter holidays and we are ready for them. They do seem to be really long though, Ellie has an extra day compared to Becky thanks to a teachers training day too. They have started to make some plans. I asked them a couple of weeks ago if either wanted to come to the cinema with me to see the new Fantastic Beasts film and they said no, they don't like those films but now they both have plans to go with different friends to see it. Hmmf. I am quite tempted to message Ellie's friend and ask if I can tag along. hehehe I am sure she would let me as we were fans of everything wizarding before Ellie had even shown any interest.
