Our weekly meal plan

Last weeks meal plan went really well even though it was so hot. I made too much of the Sausage, apple and potato one-pan roast, I used a huge roasting tray, one that just to says fits in the oven so we had it again the day after. I love leftovers, it means I didn't have to cook. I am back to cooking what I can early on in the day for tea while it's cool in the kitchen and reheating it when it is time to eat. I always enjoy my meals better this way. If I cook in a hot kitchen I never feel like eating afterwards.

It is supposed to be a lot cooler this week but I am still sticking with the lighter, easy to cook meals. As I am writing this on Saturday afternoon my laptop is saying thunderstorms are coming! Eek! I hate thunder, I have washing out on the line!

Summer really starts this week, I know the first day of summer was over the weekend but this week Ellie officially finishes college for the summer even though she hasn't really been in for the last couple weeks as they had finished their work. I have told her to really enjoy this summer as it's the last proper one she will get. This time next year she will be looking for a job and will be in the real world. Eek! She has lots of plans so it looks like she is going to make the most of it.

I don't have much on this week but do have Becky at home for most of it as she has taken some time off work, for no reason apart from she had holidays to use up and wanted a break. I am going to rope her into helping move the furniture in the living room. I fancy a change around and it's a good opportunity to give it a deep clean!

On the menu this week we have:

Monday - Stu will be cooking so I have no idea. I am guessing something out of the freezer.
Tuesday - Mango, coconut & lime chicken fillets with udon noodles and some sort of sauce.
Wednesday - Quiche and salad.
Friday - Fish, chips and mushy peas.
Saturday - Hot dogs in buns with fries.
Sunday - Sausages, mashed potato and veg.

  1. My dad was complaining how hot it was in the UK. I told him to enjoy it before it breaks. That's one thing you know about UK hot weather, it won't last!
    I'm also a big fan of leftovers. It's so nice knowing that there is a homemade meal ready that doesn't need any prep!

  3. How nice to have Becky home for the week. I’m sure Ellie will enjoy her summer break and congrats to her for finishing another year of college. Your menu for the week sounds delicious and I love leftovers too!!

  4. Am I happy that I don't have to do this anymore, but I did it 54 years long, so it's enough. Now our cook makes the menu plans, fortunately he is a good cook !

  5. That sounds like a delicious week! We pretty much never have leftovers for dinner; even if I cook extras my boys tend to find them and eat them for breakfast or lunch the next day. That said I'm hoping for some lighter easier meals this week too. Tonight we're having a stir fry with steak and scallops and veggies over rice noodles. Then tomorrow I'll throw a pork shoulder in the crockpot so the boys can all make pulled pork sandwiches. That way I don't REALLY have to cook.

  6. I can't believe this will be Ellie's last summer before she starts looking for work. Where did the time go?
    Loving your meal plan this week. I'm all for quick and easy meals this weather. Nothing worse than being stuck in a hot kitchen when it's stupid degrees outside!

  7. I never know what I'm going to eat ahead of time. It's just me and I do keep a well-stocked pantry and freezer. This week, I am eating out every day so I won't be cooking. I eat one meal a day and just a snack for breakfast. I have been dieting since Septmeber and have 5-8 more pounds to go before slowing down. Portion control and one meal a day has been working well for me. I do love hotdogs! I think I have some in the freezer. Have a good week ahead!!

  8. I try and get the cooking done early also, otherwise sometimes it's just a bowl of cereal...we are having a thunder storm now, as it has been so hot here. We get them during hot periods and I always hope they bring some rain, that way I don't have to water the garden....Mango coconut and lime sound like a delicious flavor trio. #MMBC
