My April goals & plans!

I’m carrying on with my monthly goals and plans because writing things down really gives me that little kick up the bum to actually get things done. I always feel more motivated when I have a list to look at instead of just thinking I should probably do that at some point. When it’s written down it feels more official, like I’ve made a little promise to myself.

In March, I did really well with my goals. I felt like I got loads done. A few things even got sorted that weren’t even on the list to start with. I replaced the broken washing basket, I also got a new hoover which felt exciting. There’s something about a new hoover that makes me want to clean everything all the time. Even the random bits of life admin that popped up got sorted. Last month’s goals were mostly ticked off too and I completed every single one apart from having a date night with Stu! We ended up spending money on the house instead of going out and doing something fun. Hmmf. It was proper grown-up behaviour. I am not complaining though, because it is nice to have a nice house. The kitchen got sorted, which felt amazing. I decluttered the cupboards and gave them all a really good clean, I listened to plenty of audiobooks which made me very happy and I also painted the fireplace and all around it which turned out to be much more work than I expected. Someone said I should have shown a before and after photo, so there is one below. I tried a few new breakfast meals, which were fun, I planted some seeds, I watched more than four movies that were new to me and I actually started my Lego. Hooray!

This month I want to:

Paint the doors in the living room!
Since Stu decorated the dining room, I have started noticing that the living room doors could really do with a lick of paint too. As soon as one room looks nice, suddenly everything around it starts looking a bit tired. I know, I know it was only a couple of weeks ago that I said I was done with home improvements for a while but once you start you begin spotting all the little things that could be improved. It’s a slippery slope. hehehe The doors aren’t terrible but they are looking a bit worn and scuffed, so a fresh coat of paint would make a big difference. I did briefly think about painting the walls as well, but they still look pretty good from the last time they were done.

Use the washing line!
Now it is starting to get warmer outside, it is time to stop using the tumble dryer as much and make more of an effort to use the washing line. It will save a little bit of money on the electricity bill and it will keep me busy hanging the clothes on the line. I have got a little lazy over winter and the tumble dryer has been far too easy to use. So, if the weather is good, I am making a point of hanging the washing outside instead of taking the lazy option.

Wash the cushion covers and curtains in the living room!
Washing the curtains and cushion covers in the living room doesn’t get done as often as it probably should and now I can get things out on the washing line. That means they will be done without the worry of shrinking things in the tumble dryer. The cushion covers and curtains in the living room are definitely due a good wash. Once they are clean, the whole room will feel fresher and look brighter.

Have a family day out!
Ellie is off college for two weeks for the Easter holidays and hopefully Stu can get some time off work too. I want us to have a proper family day out somewhere. Becky has her set days off work so we will work around her. I have no idea where to go but I would like it to be somewhere we haven’t been before.

Read more audiobooks!
Last month I listened to a fantastic mix of audiobooks and they were all completely different from each other. I listened to Skin by Liam Brown which was intense and quite unsettling at times. Then there was What Does it Feel Like? by Sophie Kinsella which was much more emotional but also surprisingly funny considering it deals with illness. The Midnight Library by Matt Haig was another one I finished and that one really makes you think about life choices and all the different paths we could take. The Surrogate Mother by Freida McFadden which was a proper twisty drama and finally, Swept Away by Beth O'Leary which I didn't love but I enjoyed it.

Watch four more movies that are new to me!
Last month I watched a few films that I hadn’t seen before and it was a really good mix: Bridget Jones: Mad About the Boy was one I had been meaning to watch for ages and I’m so glad I finally did. I loved it. It was sweet, funny and a little bit sad at times too. It felt a bit like catching up with an old friend you haven’t seen for years. I also watched A Minecraft Movie which was fun even though it was a bit silly in places. Then there was F1. Since getting back into Formula One I felt like I had to watch it and I’m glad I did because the racing scenes were brilliant and it had a good story too. Finally, I watched The Long Walk which turned out to be much darker than I expected. The tension really builds and I probably shouldn’t have watched it right before bed though, because it left me feeling a bit on edge.

Get my little greenhouses out of the garage!
I love my little greenhouses. They’re just the plastic-covered ones, not proper glass ones but they work just as well. I would say better because, in the winter, they just get moved into the garage and not damaged by the weather. They’ve been in the spider-infested garage over winter, so it’s time to give them a clean and get them set up again. At the moment, my seeds are growing on the kitchen windowsill but once the weather warms up they will move outside into the greenhouses and I’ll start planting even more.

Do some baking!
Finally, I want to do a bit of baking this month because I have quite a few baking supplies that need using up. It won’t be anything fancy. I’m thinking scones, cupcakes and maybe a carrot cake or two because carrot cake is my favourite cake.

Our weekly meal plan

Happy Monday! How was your weekend? Ours was a good one. Becky was very happy about the clocks changing as she had one less hour at work (she works nights) and it felt like I had a lie in as I had an early night and by the time I got up, my phone was saying 10am. hehehe I am ready for a new week and a new month! I know I keep saying it but this year is whizzing by. How is it almost April already?

Last week's meal plan went well until we got to the weekend and then none of the meals happened. We went a bit off track. Oops. It's fine, Saturdays meal has been bumped to today. Last week I was most excited to try the Cheeseburger' Rice Bake With Saucy Relish but it was just OK, it's not something I would rush to make again. Our favourite meal was the Swedish-Style Pork Meatballs With Mash And Peas! Stu walked in and said the sauce for the meatballs didn't look that good, so I made him taste it and he was pleasantly surprised, it was delicious!

I have a few things on this week and Ellie starts her Easter break from college. Stu had hoped the buses would be running their Sunday service on Friday, with it being Good Friday and hoped for a day off work but no, our buses are running their normal service. Hmmf.

On the menu this week we have:

Monday - Gousto meal - Peanut Satay Chicken Burger With Sesame Chips And Lime Slaw!
This one was meant to happen on Saturday but got pushed back. A fusion-style dish featuring pan-fried chicken coated in a rich, creamy peanut satay sauce, served on a soft brioche bun. It’s topped with zesty lime slaw for a bit of crunch and comes with crispy sesame chips on the side.

Tuesday - Gousto meal - Lamb Mince & Buttery Tatties With Minty Peas!
Juicy lamb mince with carrots and thyme served with a side of buttery tatties and fresh minty peas. Yum! This sounds like comfort food at its best. My family are really starting to enjoy lamb and it has been nice to find new ways to use it.

Wednesday - Gousto meal - Creamy Chicken Korma With Sesame Seed Chips!
Chicken breast in a rich spiced sauce served with crispy homemade black sesame seed chips. This one sounds nice and mild, which suits us perfectly. I don't like anything too spicy.

Thursday - Gosuto meal - Sweet 'N' Smoky BBQ Chicken Fajitas!
These sweet 'n' smoky BBQ fajitas are filled with chicken, cheddar cheese, sour cream and vegetables. All wrapped up in soft tortillas. I will probably overfill them and them they will be messy to eat but that is part of the fun of fajitas.

Friday - Chip shop!
It has been a few weeks since we last ordered food from the chip shop. No cooking, no fuss and the biggest drama is deciding what we fancy.

Saturday - Home made pizza!
It has been a while since we made our own pizzas. I will buy the bases ready-made and we can add our own toppings. I will be going for BBQ sauce, smoky sausage, onions, mushroom and a little sprinkling of cheese.

Sunday - A help yourself evening!
Or leftover pizza if we didn't eat it all. We always seem to make too much which isn't a bad thing as it means no cooking the next day!

A photo every day for a year! 22nd - 28th March Week 13 of #Project365

Happy Sunday! I hope you have all had a good week! I've had a quiet one which has been nice but I don't feel like it has been a productive one. I have done the usual housework but not much else apart from dying my hair twice, which I will come to in a moment. The weather was all over the place, very spring looking with sunshine and blue skies but cold as well. On Wednesday I had the heating on and a blanket over me as it was so cold. It feels like we've had all the weather this week. Wind, rain, hail, sunshine and a bit more wind! We don't have much planned for today apart from watching TV and relaxing.

81/365 22nd March
Sunday was the Tyne-Wear derby! Newcastle v Sunderland and it did not go well for Newcastle. They lost 2-1. I've noticed something with the team. They always do so well in the first half and then they have their little half-time break and then it seems to go downhill. I am sure they go off to the changing room and fill themselves up with Greggs pasties. lol

82/365 23rd March
Our new wheelie bin was delivered. Hooray! It's twice the size of our old one and I think it will be needed now that all our recycling will go into it! As of writing this, we are still waiting for our old one to be collected.

83/365 24th March
I decided to dye my hair. It was the time when I needed to bleach it and that all went well. I then decided to try a new colour: Carnation Pink. I bought it by mistake thinking it was Flamingo Pink and it turns out they are two very different colours. Anyway, I put it on and it did not go on well, it was patchy and I just didn't like the colour, so I just put a Pillarbox Red on over the top and all was good. I don't often have hair disasters. This was one but at least it was fixable.

See those little white dots on the ground, those are hailstones! I thought it had hailed earlier in the day but by the time I looked out of the window, it had stopped. This time I caught it and while taking a photo I suffered getting those little balls of ice down the back of my jumper! Brr!

85/365 26th March
Getting the Easter Eggs was easy, a lot easier than I thought it would be. I ordered them with the food shopping but didn't expect them all to be delivered. Every other year there is at least one missing or substituted. Well done Tesco!

86/365 27th March
I had a night out and I just love the toilets in a bar. They are always so much nicer than anywhere else! The décor is always so colourful and fun!

I had a lazy day after a late night. I spent most of it watching Friends on TV. It is such an easy show to watch as I have seen it all so many times before and most of the episodes I know word for word.

This week my Word of the Week is: Bins!! #WotW

This week my Word of the Week is:

Bins

This week my mind has been on our bins. I know how boring!! Apparently we’re getting simpler, smarter recycling where I live. That’s what they’re calling it anyway. I’m sure it will be simpler eventually but at this moment in time it just feels like a lot of faffing about and trying to remember the new rules. Oh! and to top it all, they are changing the days the bins will be collected, add in the bank holidays and it's going to be chaos for the next few weeks!

Right now we have 3 wheelie bins. Garden waste, recycling and general waste and two boxes. One for cans and one for glass bottles or jars. From the start of April, the boxes are going and all the recycling goes into our new, bigger red bin, food waste goes in the garden bin and the general waste is used for everything else. It sounds simple when it is written down but it's a lot to get my head around.

Our new bigger red recycling bin was delivered on Monday and I thought ahead. I ordered some of the sticky numbers weeks ago to put on it. Of course, I couldn't find them. I looked everywhere but came across them eventually. I wanted our house number on because now everyone's red bins are the same. I don't want to get mixed up.

I think we have been short changed. My dad's cousin, who lives in Hartlepool, was given an outside caddy for food waste and a smaller indoor one. They were also provided with liners to put in their wheelie bins. We get none of that. I bought an indoor caddy to make life a little easier. Going outside after every meal to scrape the plates does not sound like fun. I guess you can tell I am not happy about the food bin situation. We don't have that much food waste, which is probably a good thing but we still have some and I can just imagine how it's going to stink in the summer. I know it will knock me sick every time I open the wheelie bin. Our council is helpful. They suggested freezing food waste. lol Especially for smelly items like raw meat or fish. They say you can store the waste in a container in your freezer then transfer it directly into the outdoor bin on collection day. I can just imagine it. Stu is getting ready for work, goes into the freezer and picks the wrong tub and takes a tub of food waste for lunch. lol

It just seems to be making more work for me. The garden/food wheelie bin will need washing out every week in the summer. What happens if a hosepipe ban kicks in? I did think about getting the biodegradable wheelie bin liners but as far as I can see online, our council is saying no to them. Ugh! I suppose it could be worse. If we did have a food caddy I can just imagine it blowing away down the street.

Now I have to train my family in how to use the bins. The old recycling bin was emptied earlier in the week, so now all recycling goes into the big red bin and this week we are starting to use the indoor food caddy. Becky stood in front of me the other day with a handful of things, trying to figure out what was going in which bin. I know we will get used to it eventually but until then, keep me in your thoughts because I predict me getting shouty with my family when they put things in the wrong bins.

The little things I love about spring! #FridayFavourites

Happy Friday! I hope you’ve had a good week. Mine has been good but I don't have much to share when it comes to the things that I have loved this week. There is a few things but nothing new, that I haven't mentioned over the past few weeks. After answering questions about Spring in The Wednesday Hodgepodge, I had more to add so I thought I would share the little things I love about spring! As always, I’m linking up with Erika and Andrea to share the things that I have loved over the past week.

The little things I love about spring

Don't get me wrong, not every day here over the last week has felt like a spring day. When I started writing this on Wednesday afternoon it was blowing a gale outside, one minute it was sunny and the next there was rain. I'll take it though, the sun is shining more than not and that makes me happy!

So here are my favourite things about spring!

Not having to wear a massive coat!
This is a big one for me. The heavy winter coat makes me feel like I'm carrying around a duvet which is nice in the winter but by now I am so over it. Plus at this time of year the weather is so changeable but a lighter waterproof jacket does the job.

Washing actually drying outside!
I can’t explain how happy this makes me. After months of using the tumble dryer getting the washing out on the line and it actually drying feels like a proper win. It all smells so much nicer too.

Opening the windows again!
This always feels like a turning point. After months of keeping everything shut tight to keep the warmth in it is nice to open the windows and keep them open all day! Fresh air coming in makes the house feel better.

Lighter evenings!
This changes my whole mood. When it’s still light at 6 or 7pm it doesn’t feel like the day is over after tea. There’s still time to do things, even if that thing is just sitting scrolling on my phone but with the window still open!

Easter chocolate!
I say every year that my girls are too old for Easter eggs and every year I still buy them. If all has gone to plan the Easter eggs arrived with the food shopping delivery yesterday. Of course I bought one for my fella and I too. I have been eating Easter chocolate for the last couple of months. Cadbury Mini Eggs and the mini Reese's bunnies are my favourites.

Daffodils are everywhere!
They just turn up and brighten everything, they are such a cheery flower. Even the scruffiest patch of grass looks nicer with a few daffodils in it. I have been buying them and having them delivered with the food shop since the beginning of the year, they are the most inexpensive flower that adds a bit of cheeriness to my living room.

The garden coming back to life!
After the winter where the garden looked a bit sorry for it's self and we forgot about it, the garden is starting to do it's thing again. Little bits of green popping up and the grass is growing fast, my fella has already had to cut it twice but the new 2nd hand lawnmower we have is fantastic. It has a box on the back which collects all the cut grass to make the job easier.

Planting seeds and hoping for the best!
I always get a bit carried away with this. I’ll plant seeds full of hope and good intentions and then forget which is which or forget to water them properly. Some survive, some don’t but it’s still nice to try. At the moment I am very organised and have everything labelled and I am keeping up with the watering. I even have some shoots coming though.

Hearing the ice cream van again!
Even if I don't buy an ice cream from it every time, it's still nice to hear the little tune that it plays. The ice cream van makes me think of my childhood. My brother and I were always allowed to get an ice cream on a Sunday afternoon. It was such a treat! I have not seen our heard the one that usually comes round where I live yet this year but I think this might be the weekend that it reappears.

Random bursts of motivation!
Spring always does this to me. I suddenly want to get jobs done that I’ve been ignoring for months. DIY bits, sorting cupboards, little projects. It doesn’t always last long but I like the feeling of being productive when it lasts!

My go to rhubarb crumble recipe!

March in the UK means that spring has arrived and what that means is that rhubarb is available! Rhubarb season in the UK usually kicks off in late February and runs through to about June, with the peak often being around March to May!

There are a lot of classic desserts that I love, like sticky toffee pudding, trifle, jam roly-poly but there’s something about rhubarb crumble that makes it stand head and shoulders above the rest, especially at this time of year! This isn’t just any dessert, it’s the kind that makes your kitchen smell like happiness and even the most reluctant pudding lovers come back for seconds. Tart, sweet, buttery and just a touch rustic, rhubarb crumble is without a doubt, one of the best ways to welcome spring into your life and it’s surprisingly easy to make even if you’re not usually a whizz in the kitchen. Did you know that rhubarb is packed with vitamin C, fibre and antioxidants? so you can convince yourself that you are having a treat but you’re also doing something good for your body.

Rhubarb crumble recipe

You can serve it straight from the oven with a dollop of custard or with cream or ice cream. Some people even like it slightly warm with a drizzle of golden syrup and for those of us who like to get a little creative, you can mix rhubarb with other fruits like strawberries, which are the obvious choice but oranges, apples and even blackberries work beautifully too.

Rhubarb Crumble Recipe

Serves: 4 to 6 people.
Prep time: 15 minutes.
Cooking time: 35 to 40 minutes,

Ingredients!

For the filling:
500g of rhubarb,
100g of caster sugar (adjust depending on how tart your rhubarb is).
1 tsp vanilla extract (optional).
1 tbsp plain flour (helps thicken the juice).

For the crumble topping:
100g of plain flour.
75g of unsalted butter, cold and cubed.
75g of light brown sugar (or granulated sugar if you prefer).
50g of oats (optional, for extra crunch).
A pinch of salt.

Instructions!

Preheat your oven to 180°C / 160°C fan / 350°F / Gas 4.

Prepare the rhubarb:

Start by washing your rhubarb and chopping it into chunks, about 2 to 3cm pieces. Not tiny bits because they’ll turn to mush but not massive sticks either. You want them to soften but still hold their shape.

Pop the rhubarb into a bowl and sprinkle over the sugar. The sugar isn’t just for sweetness, rhubarb is sharp and the sugar also draws out the juices while it bakes, which helps create that lovely syrupy bottom layer.

Add the teaspoon of vanilla if you’re using it. It just rounds out the flavour and takes the edge off the tartness a bit. It's not essential but I always add it if I have it.

Now sprinkle over the tablespoon of plain flour and give everything a good mix. This is important because rhubarb releases loads of juice when it cooks. The flour thickens those juices so you don’t end up with rhubarb soup under your crumble.

Make the crumble topping:

Put the flour into a bowl and add the cold. Cold is important here. If the butter is soft, you won’t get that crumbly texture and it will go pasty. Rub the butter into the flour using your fingertips. Keep going until it looks like breadcrumbs. Don’t panic if there are a few slightly bigger lumps; those turn into the best crunchy bits on top.

Stir in the light brown sugar. I like brown sugar because it gives a slight caramel flavour and a deeper colour on top but granulated works fine too. Add the pinch of salt. It sounds tiny but it balances the sweetness and makes everything taste better.

If you’re using oats, stir them in now. They add texture and a bit of chew.

Assemble:

Sprinkle the crumble mixture evenly over the rhubarb. Don’t press it down! Just let it sit loosely on top. If you press it, it goes dense instead of crumbly.

Bake:

Pop it in the oven for 35 to 40 minutes. You’re looking for bubbling fruit around the edges and a golden brown top. If the top browns too quickly, you can loosely cover it with foil for the last 10 minutes.

When it comes out, it will be molten underneath, so let it sit for at least 10 minutes before serving. This helps the filling thicken up a bit more too.

Serve it with custard, cream or ice cream but it is delicious on its own too!

I hope you are all having a good week. It's Wednesday, which means it's time to join in with the Wednesday Hodgepodge with Joyce who blogs at From This Side of the Pond! Each week there are 6 questions, we answer and then link up. Simple!

The Wednesday Hodgepodge

1. It's officially spring in the northern hemisphere. Does it feel like spring in your part of the world? If you're in the southern hemisphere it's officially autumn where you live. Does the weather say autumn? Which do you prefer-spring or autumn? Why?

It does feel like spring here now here in England. Not all the time, of course, the morning's and evenings are still chilly but it has been warming up during the day. I know it's spring because Ellie has started wearing shorts and has asked for a new pair of sandals. The lighter nights are slowly happening, which I love and it feels nicer being outside again without having to wear layers and a thick coat. Daffodils are popping up everywhere, people are out cutting their grass, the birds are singing more and the only thing that is missing is the ice cream man coming around in his van. He must be due any day now!

I definitely prefer spring. Spring feels like a fresh start after the winter. Autumn is nice, I do like the cosiness of it but it always feels like the fun days of summer are ending. Once summer is over, the colder, darker days of winter are on their way. Spring is the opposite of that, with everything starting again and we have warmer days and summer to look forward to too.

2. What's your favorite thing about spring?

I think my favourite thing about spring has to be gardening! Seeing the garden waking up again after the winter is special. I love planting seeds and I get a bit too excited about it. I'm no expert, I just hope for the best. I like starting from scratch with the tiny seeds, a bit of compost, water and then waiting. I'm not a patient person when it comes to my seeds and I check on them several times a day as like they’re going to grow quicker just because I’m staring at them. lol When the green shoots come through, I feel like I have achieved something massive.

3. Spring into action, spring in your step, spring to life, spring to one's feet...which spring idiom currently applies to your life in some way? Explain.

I’d say spring in my step fits me right now. I always say I’m not affected by Seasonal Affective Disorder and that winter doesn’t really bother me but then spring happens and I realise I was bothered. I feel like I have a spring in my step now. I seem to wake up before my alarm clock with more energy, I have more motivation to get things done instead of putting them off and even the boring jobs don't feel that boring when the sun is shining! It’s like I’ve got a bit of a bounce back without really trying.

4. Which spring food from this list is your favorite? What's a dish you like that includes your favorite spring ingredient?

asparagus, strawberries, salad greens like mesclun, artichokes, spinach, eggs, peas, spring onions.

It has to be strawberries! They’re my favourite fruit but they’re just not that great here until later in the year. I bought some a few weeks ago thinking I’d treat myself and they were such a disappointment. They were so small and not very sweet. I do seem to eat more eggs this time of year as well. It’s always hard-boiled eggs, chopped up and mixed with salad cream. It's nothing fancy but it tastes so good in a sandwich. Here in England my favourite spring foods are rhubarb, new potatoes and lamb!

5. What's one task on your spring cleaning list? Do you actually have a list?

I feel like I’ve already done my spring cleaning without even meaning to. After all the DIY, painting and decluttering over the last few months, there’s nothing much left to do apart from jobs around the garden. I don’t have a list apart from having to wash the garden furniture and get my little greenhouses out of storage. I think I would have needed a list if all the work hadn't been done. It's quite nice not having that hanging over me.

Easter really feels like it’s snuck up on me, it is less than two weeks away! Last year, Easter wasn’t until the middle of April, so this year has caught me a bit off guard. I’ll definitely need to get some Easter eggs for the girls, even though I keep telling myself they’re too old for them now. Who am I kidding? I want an Easter Egg too. lol Chocolate always tastes better in an egg shape. Ellie’s got a couple of weeks off college at the start of April and my fella has said he’s planning to take a few days off work too, so it’s looking like I'm going to have to plan a proper family day out. I have no idea where yet? I’ll need to start thinking of somewhere that everyone will enjoy. Eek!

Why I’m useless at giving advice but still love soaking it up!

I always feel guilty asking people for advice. I really appreciate it when it is given to me but I think it's because I am not the best at giving it myself. It’s an odd contradiction! You’d think that someone who loves listening to advice would have picked up a knack for giving it back but no! This isn't a blog post asking for any advice or anything like that, all is good here. It was just one of those things I was laid in bed thinking about and thought I would write about it.

I think part of the reason I’m terrible at giving advice is that I know how complicated life can be. Everyone’s problems and worries are different and no one else fully understands but the person living it. I want to be that person who offers the right words at the right moment, the wise friend whose pearls of wisdom sparkle but the truth is when someone asks me what they should do my thoughts go into overdrive. What if I suggest something and they do it and it somehow ruins their day/life/relationship? By the time I’ve thought through all the possible outcomes, the conversation has usually moved on.

Even though I’m rubbish at advice giving, I love getting advice from others. Sometimes I don’t even want advice that’s practical or logical, I just want to hear another perspective, a different way of thinking about whatever mess I’m in or things that I am fretting over. There’s something good about sharing your struggles and hearing that someone else has been there too or that they see a sliver of light where you only see darkness. When I get advice, it’s not always about finding the right answer but about feeling supported. I think part of why I love hearing advice is the variety of it all. Everyone’s experiences and perspectives are different so even if ten people give you advice on the same problem you’ll probably hear ten different takes on it and somewhere in all of that might be the piece of wisdom that clicks perfectly for you.

Why is it so hard for me to give good advice? I know all too well that what worked for me won’t necessarily work for someone else. Advice isn’t a one-size fits all kind of thing but that said, I’m working on getting a little better at giving advice or at least being more comfortable offering it when asked. I’ve realised that people often aren’t expecting you to have all the answers sometimes, they just want a different perspective, a bit of encouragement or even just a listening ear.

If you ever find me stumbling over my words when you ask for advice sometimes I just can't find the words but I am trying and I do care! Are you good at offering advice or do you second guess yourself like me?

Our weekly meal plan! 23rd - 29th March!! #MealPlanningMonday

Our weekly meal plan

How was your weekend? Ours was a good one. I spent some time out in the garden giving it a tidy, cleaned the house and watched The Dinosaurs documentary off Netflix which was so interesting and that's about it. It doesn't sound too exciting but to me, it was the perfect weekend. Jobs got done, I felt productive and had plenty of time to relax.

Last week's meal plan went pretty well and we ate almost everything on the day I had planned. I like it when I have a good run of our meal plan going to plan. The Sage & Onion Pork Stuffing Yorkshire Pudding Wrap was my family's favourite meal of the week. It was amazing but it was a bit of a faff to make, getting all the timings right and cooking the Yorkshire pudding twice as my biggest tray wasn't big enough. You can see a photo on my Project 365 blog post. Ellie wasn't too happy as it was her evening to wash the dishes and there was a lot. The only thing we didn't eat was the chippy tea on Friday. Becky was at work and Stu didn't fancy anything after a big lunch, so Ellie and I ordered a McDonald's. What a treat!

This week Becky chose the Gousto meals and we all agreed that they are good ones. I was quite surprised she picked the rice dish as she isn't a massive fan of rice but like she has said, the older she gets, the more her taste is changing. A few months ago, she would never eat eggs apart from scrambled but now she can't get enough of them. I know there were a lot of things I wouldn't eat 20 years ago that I love now, like parsnips, cabbage and peanut butter!

On the menu this week we have:

Monday - Gousto meal - Oven Baked Pork Belly & Winter Veg Pot Roast!
This is proper comfort food. It says to cook it in a pan but I ignore that and throw everything into the slow cooker because I like to make life easier where I can. Pork belly, carrots and parsnips in a herby gravy, served with roast potatoes. Ellie usually turns her nose up at anything that comes out of the slow cooker but this is the one exception. She actually asks for it at least once a month, which says a lot.

Tuesday - Gousto meal - Swedish-Style Pork Meatballs With Mash And Peas!
We have had this before but it's a good one. A classic dish made with juicy pork meatballs served over creamy mashed potatoes with homemade gravy. There are peas on the side finished with dill and cranberries!

Wednesday - Gousto meal - Cheeseburger' Rice Bake With Saucy Relish!
The cheeseburger and rice together sounded odd but I am looking forward to trying this. It is an oven baked and made with seasoned mince, onions and rice which are cooked together then topped with cheese. It’s finished off with a drizzle of burger sauce and a spoonful of tomato relish.

Thursday - A Chippy tea!
We're swapping our usual Friday tea to Thursday because it is just easier that way this week. I have a busy day planned on Thursday and it will be easier to get something delivered than me cooking!

Friday - A help ourselves evening.
Stu and I are home alone, so we will probably just make something quick and simple like an omelette or a toastie.

Saturday - Gousto meal - Peanut Satay Chicken Burger With Sesame Chips And Lime Slaw!
This sounds so fancy. A fusion-style dish featuring pan-fried chicken coated in a rich, creamy peanut satay sauce, served on a soft brioche bun. It’s topped with zesty lime slaw for a bit of crunch and comes with crispy sesame chips on the side. To me, it's just a satay chicken burger with chips and a bit of salad. lol

Sunday - A roast dinner!
I don't know what meat we're having yet but I fancy cooking a roast dinner with all the trimmings. Mashed potato, roast parsnips, carrots, peas, cabbage, stuffing, Yorkshire puddings and gravy!

A photo every day for a year! 15th - 21st March Week 12 of #Project365

Happy Sunday! I hope you have all had a good week! Mine has been a good mix of the normal day to day stuff, relaxing and getting things done. I know it was the start of spring on Friday but this week has felt very spring like here, which has made me happy. I have had a good weekend so far, a mostly quiet one. Becky finished a night shift Saturday morning, slept a bit and then got ready and went out for a night on the town. I watched her getting ready, thinking How do you have the energy? Oh to be young again! lol The plan for today is to sit down and watch the Tyne–Wear derby. Newcastle vs Sunderland and finish watching The Dinosaurs documentary off Netflix. It is so interesting and has the voice of Morgan Freeman, I could listen to him all day!

Before I get into my photos from the week, I just wanted to take a moment to mention something really important. The lovely Suzanne who blogs over at Life With Chickenruby is doing something amazing. She’s running the Brighton Marathon next month which is such a huge achievement for anyone but what makes it even more special is that she only started running back in October. She’s doing it in memory of her daughter Stephanie who sadly passed away in October 2024 from an ischemic bowel. I can’t even begin to imagine what she and her family have been through but she’s using her strength to raise awareness and hopefully help other families avoid going through the same heartbreak. If you’re able to, even just a small donation on her Just Giving page would mean so much and if you can’t donate, even sharing her page helps spread the word.

Mother’s Day this year was lovely. I was spoilt rotten and one of my favourite things was actually something really simple, the inside of one of the cards Ellie gave me. It was a pop-up card and what made me laugh was she didn’t even realise until she went to write inside it. I'm sure she walks around with her eyes half closed sometimes, she misses the most obvious things and then acts surprised when they suddenly appear in front of her.

I was in the garden pottering around and spotted what I thought was one ladybird on a little tree. I do like ladybirds, so I went to have a closer look and noticed about 6 of them just doing their own little ladybird thing. I hope this isn't a sign that there will be lots this year. I am sure it was last year there were swarms of them. I don't mind though, they are less annoying than some of the bugs and critters that we get in the warmer months.

Someone asked me to share a photo of the Yorkshire Pudding wraps that I made. This was the best one, they all didn't look this good. lol They tasted amazing but were a faff to make and created a lot of washing up but were still worth it!

Wednesday was a washing day! I got a couple of loads dried outside. Everything always smells cleaner when it has been on the washing line and it makes me happy to see a line full!

78/365 19th March
I saw these Oreo Creme Egg biscuits online a few weeks ago and I thought they were fake. I have seen fake things especially when it comes to seasonal stuff so I am always sceptical but I found them in Morrisons. They are quite nice. I don't think I will buy them again but they were good to try just for the novelty.

79/365 20th March
The Peaky Blinders movie arrived on Netflix and I had nothing to do on Friday afternoon, so watched it! I really enjoyed it and I am not going to say anything else in case I ruin it for people who haven't seen it yet.

80/365 21st March
As the delivery guy said to me when he dropped this off, it must be Saturday! I always get the Gousto recipe box delivered on a Saturday. Becky picked the meals for the next week but you will have to wait until Monday to read about them.

This week my Word of the Week is: Options!! #WotW

This week my Word of the Week is:

Options

For the last month or so I’ve got into the habit of sitting down to write this post with one clear word already picked out in my head. This week there were just too many words that I could have used, I had options and that is the word I am going with.

It could have been sport! I keep saying I’m not a sports fan but I've had another week of watching quite a bit of sport. There was another F1 race and plenty of football too. We’ve had a couple of Tottenham Hotspur matches on in the house and then there was the Newcastle United match on Tuesday. Oh my goodness, what a game that turned out to be. They were playing Barcelona and for a while it actually looked hopeful and then it all went a bit wrong. One mistake, a penalty given away and from that point on it just went downhill. They lost 7–2. Eek!

It could have been poorly! Poor Becky hasn’t had the best week. At first we both thought the hayfever had started early but after a couple of days of a snotty nose and scratchy throat, it became pretty clear it was a cold. Not the worst cold in the world but enough to be annoying. She has carried on with life, with a pocket full of tissues and thankfully hasn't passed it to the rest of us. Then there’s my dad. I had a chat early in the week and he mentioned he had a bit of a tickly cough, but when I rang again a couple of days later to check in, it had definitely got worse. He's fine in himself and just has a cough. Oh, and a sore throat now from all the coughing!

It could have been planting! I planted plenty of seeds over the weekend. Some flowers, sweetcorn, tomatoes, onions, peppers, cucamelons and strawberries. They are all sat on the windowsill in the kitchen. It's the perfect spot for them at this time of year as it gets all of the sunshine. I am hoping to see them growing any day now! This year will be the year that I successfully grow strawberries. I have never had any luck with them.

It could have been early! I don't usually go to bed early but this week I have, all because I have been getting up early. It all started over the weekend. I had planned to have a little lie in on Saturday but woke up early as the curtains weren't shut properly, the sun was in my eyes and on Sunday, I was up earlier than I would be on a Sunday because it was Mother's Day and I wanted to make the most of being waited on hand and foot. hehehe There was also the fact I wanted to watch F1. All week I have been waking up early which of course means I have been going to bed and going to sleep earlier. It’s not a bad routine to fall into but I don't feel like I am getting that quiet time on an evening when everyone else is in bed.

It could have been holidays! This is the time of year when work holidays start getting booked and it always turns into a bit of a battle. Stu and Becky both have to think ahead, especially when it comes to family birthdays. They always try to take those days off, which is lovely but this year it’s going to be a bit tricky as a lot of the birthdays fall on weekends and everyone wants those days off. It is going to be a race to get them booked and Stu it up for it and is checking the holiday app every few hours and Becky is a little more chilled but keen to get her dates booked in.

It could have been T-shirts! That's all I've worn for most of the week, only putting on a jumper or hoodie later in the evening when it has got colder! It has felt nice to have some sun on my skin and I do have so many great T-shirts which haven't seen the light of day. Becky even got me a couple more for Mother's Day with my favourite wrestlers on. They're oversized and are so comfy, I can see them getting a lot of wear over the next few months.
