Last weeks meal plan went well. We ate everything I had planned but I did swap a couple of days around. On Monday we ended up having Bacon Grill, mushrooms, tomatoes and toast. It had felt like we had a busy day with the power being off due to a power cut and getting lots of jobs done around the house so I wanted something easy to make. Our favourite meal of the week was the Chicken Katsu Salad With Curried Coconut Croutons which at first my family couldn't get their head around the idea of as they always have chicken katsu with rice but it tasted so good and it had cucumber on which I added as an extra which I grew myself in the garden! Go me. lol Our help ourselves evening was changed from Friday to Thursday and we helped ourselves to an Indian takeaway. hehehe
This week we have another Gousto box and a new recipe to try, Pork & Beef Bolognese Bean Bowl With Garlic Ciabatta which in hindsight feels like it should be more of an Autumn meal with it looking so hearty. In my defence I ordered it last week without looking at the weather forecast for this week. It's supposed to be quite warm again with lots of sunshine. It is Stu's birthday at the weekend and we sort of have plans but nothing set in stone yet. He hates us planning anything for him so we have to come up with something closer to his special day and just tell him what we're doing, I have a few things in mind. He doesn't like us making a fuss but it's a birthday and fuss has to be made! hehehe
On the menu this week we have:
Monday - Gousto meal Sweet 'N' Smoky BBQ Chicken Fajitas.
Tuesday - Gousto meal - Creamy Sausage & Red Onion Tart.
Wednesday - Gousto meal - Pork & Beef Bolognese Bean Bowl With Garlic Ciabatta.
Thursday - A help yourself evening as Ellie and I have plans.
Friday - Scampi, chips and peas.
Saturday - Takeaway or a meal out for Stu's birthday, we're not sure of our plans yet.
Sunday - A roast dinner of some sort.

I love it when I can use garden veggies in a meal at home! Your meals all sound good. I hope that you can come up with a good plan for Stu's birthday. My husband is the same way but, yeah, you gotta make a fuss over a birthday, lol! Have a great Monday!
