Our weekly meal plan

Last weeks meal plan went really well. We ate almost everything and on the day I had planned too. Life is so much easier when everyone is where they should be, at work and at college. 

We have 2 Gousto boxes over a week this time. The first was delivered yesterday and the 2nd one is coming on Saturday. I am looking forward to the meals from it. They are all meals that we love and have had before apart from the Hearty Chicken & Spelt Soup With Parsley Oil, that is a new one for us but it sounds perfect for the weather we have been having. I don't think we have anything exciting happening this week. I have no plans at all. I am loving this boring life, long may it last. On my to-do list this week is sort the freezer out and defrost it a little, cut the grass in the back garden, sort my wardrobe out, getting all of my jumpers out of the bottom of it and put some summer clothes in their place and some baking if I have time.

Tuesday - Gousto meal - Crispy Pork Spring Roll Wraps With Sweet Chilli Sauce.
Wednesday - Gousto meal - Hearty Chicken & Spelt Soup With Parsley Oil.
Thursday - Gousto meal - Oven-Baked Pork Belly & Winter Veg Pot Roast. I will be cooking this in the slow cooker.
Friday - Fish cakes, chips and baked beans. Nice and simple and we've not had fish cakes in ages.
Saturday - Gousto meal - Chinese-Style Veggie Fried Rice And Fried Egg.
Sunday - Sausage casserole, mash and veg. I know that I have about 4 bags of 20 sausages in the freezer to use up.

Week 39 of #Project365 22nd - 28th September. A photo every day for a year!

Hello there and Happy Sunday! What do you have planned for today? We have no plans at all which I am very excited about. There's no DIY happening which makes a nice change and I am planning on doing as little as possible. I was looking out into the garden earlier and was thinking the grass needs cutting, that can be a job for Stu. hehehe

It has felt very much like Autumn here, even as I am writing this yesterday it looks lovely and sunny outside but it is still quite chilly and I am sat here in fleecy pj's which I love. I have been doing all the things to feel cosy and embracing Autumn, for the first time in forever I am not feeling sad that summer is over.

266/365 - 22nd September
Stage 2 of decorating the kitchen, painting the inside of the cupboards. They took longer to dry and are such a faff especially since we decided to put vinyl wrap on the shelves but they are looking great now. You can see the end result on my Instagram.

I am loving shutting the curtains earlier on an evening when it starts to get dark. Usually coming on for 7pm. It won't be long before I am shutting them about 4pm. Eek!

One of our meals from during the week. The honey and soy beef stir fry from Gousto! We've had it before and it's a good one which we all love.

269/365 - 25th September
I am making the most of having washing out on the line even if I was keeping an eye on the black clouds. We've been forecast rain every day this week and I'd say only half of it has arrived. I feel quite lucky after seeing about the floods on the news.

270/365 - 26th September
I joined the queue for the pre-sale Coldplay tickets, hooray for living in a postcode area that had first pick. They sold out in about 20 minutes and I didn't get anywhere close or in the general sale on Friday. The next round of tickets which are released on the 22nd of November and I will try again.

I am loving coming in for the day and putting my pj's straight on and filling a hot water bottle.

This week my Word of the Week is: Autumn! #WotW

This week my Word of the Week is:

Autumn

It was the official start of Autumn on Sunday and since then it has really felt like it! It's got so much chillier here. I had my big coat on yesterday while I was out and for the first time in ages I wasn't sweating. The weather doesn't know what it's doing. I am sitting here looking out of the window at blue skies and sunshine, half and hour ago there was grey clouds and rain. I saw the news about all the floods earlier. They look terrible, I hope you are all staying safe. I don't think we have got half of the rain that we were forecast here, thankfully! It did chuck it down on Wednesday night but the rest has been that fine, misty drizzle. 

It's already getting darker on an evening, earlier than it did a couple of weeks ago and I am loving being able to shut the curtains and get cosy. I do like this time of year where there is still plenty of daylight, I know in a month or so I will be complaining about it being dark so early. hehehe As soon as I am in for the day I have been getting changed into my thick pj's and filling an hot water bottle, I am not ready to start putting the heating on yet. Blankets, hot water bottles and cosy pj's will keep us going for a little while yet. Poor Stu is feeling it though, he said it is freezing when he leaves for work on a morning.

Our summer wasn't the best so I am embracing Autumn and I am making the most of the season. I bought myself a new automatic air freshener with a pumpkin spice scent which smells amazing, I treated myself to an autumnal bouquet of flowers for the living room, a new mug that says "Stay Cosy" on it for all the hot chocolates that I am planning on drinking and I have been burning candles more.

The Great British Bake Off started on Tuesday which makes it really feel like Autumn and it has made me want to do some baking! For years I have been saying that I am going to make a pumpkin pie but it's one of those things that I have never got around to but earlier this week while I was doing the food shop I saw tinned pumpkin puree. I bought a couple of tins so that is on my Autumn to-do list! My family have never tried it before so are interested about it.

Now is the time when my mind turns to Christmas and I have started buying some presents. Not much but it's a start. My family keep asking what I want for my birthday in November and I don't have a clue, for the first time in a long time there is nothing that I really want or need. I will have to get my thinking cap on.

What I have loved this week! Week 39. #FridayFavourites

Hello there and Happy Friday! I am here to share some of my favourites from the week and of course link up with Erika and AndreaWe have had a good week. Things seem to have calmed down in my life and I am feeling happy and quite relaxed about how things are which is a good thing. 

What I have loved this week

Finding a routine!
Last week my Word of the Week was "Normal" as it was the first normal week in months but this week has felt even more normal. I have finally found myself a routine and it is working well. I have set myself times to do things, sticking to my to-do list and I have even made time in my day to catch up on bloggy things and do things that I enjoy like playing The Sims. I have finally found a good balance in my life.

Christmas food!
It's that time of year when all the Christmas food has started arriving in the supermarkets and I love it! I've started small, just getting some Christmas cake slices but I know there will be more treats going in my online shopping cart every week until Christmas.

Inside Out 2! 
I finally got around to watching it! Both of my girls went to the cinema to see it, Becky saw it twice so I knew it must have been good. I loved it.

Inside Out 2 returns to the mind of newly minted teenager Riley just as headquarters is undergoing a sudden demolition to make room for something entirely unexpected: new Emotions! Joy, Sadness, Anger, Fear and Disgust, who've long been running a successful operation by all accounts, aren't sure how to feel when Anxiety shows up. And it looks like she's not alone.

Yes, more talk about my kitchen. I shared a post during the week with the before and after pictures of our new kitchen after we had painted it all! What we had done nothing with was the inside of the cupboards so that was stage 2 of the decorating and what we have been doing this week.

Painting and sorting the insides of the cupboards is more faff than painting the outsides. The vinyl wrap on the shelves is a pain to put on but I do think it looks good! 

Chappell Roan!
Chappell Roan's music is pretty new to me but apparently she has been around for years. I kept hearing some songs on TikTok and not realising they were all her. I have been listening to her album The Rise and Fall of a Midwest Princess again and again. She really reminds me of Kate Bush and I can see her being the next big thing.

I was sorting through my bottles of nail polish and was looking for some Autumnal colours not the bright one's that I have been wearing for the summer. I found this old Pink Mocha one which I don't even remember buying, there was only enough to do my nails left in the bottle.

Jumpers!
It's jumper weather and I have got all mine out of the bottom of my wardrobe to wear over the colder months. I am slowly putting my summery clothes in the bottom of the wardrobe now. I have put a jumper on each morning and by mid afternoon I've had to take it off as I always warm up by that time.

What I like to do on my laptop!

Laptops have become more than just tools for work, they’re also portals to endless entertainment. Whether I'm winding down after a long day or just looking for a way to pass the time, my laptop is my go to device for fun. I spend a lot of time on my laptop, less than I used to but definitely on an evening you can find me sat in my armchair with it on my knee.

These are the things which I like to do on my laptop:

Blogging!
Of course! I do all of my blogging on my laptop. I have read that some people blog from their phones or a tablet but I could not imagine doing that. With blogging comes reading other people's blogs too which I do on a daily basis and I really enjoy.

Making playlists!
I love making a good playlist on Spotify. I have a playlist for every mood, season and occasion. I even have a couple full of songs that I've heard on TikTok which I keep adding too.

Shopping!
Shopping is so much easier now I can do it online. Sometimes I will just add things to my basket and never buy those things and other times I am on a mission to buy birthday or Christmas presents. My favourite website to browse is Shein, I know sometimes people frown upon Shein but I like it, it's cheap, the clothes always seem to fit me well and there's the make up which comes at a bargain price too.

Reading about the soaps!
I love reading about what's coming up in the likes of Eastenders, Corrie, Emmerdale, Neighbours and Hollyoaks. Yes, I could just watch and see what happens but I like to know what is coming!

Pinterest!
I have love scrolling through Pinterest getting ideas for various things like home decor, recipes and tattoos that I will probably never get.

Chatting!
I speak to more people online than I do in real life and I love the chats that I have with those people. Whether it be through email or Messenger. I do love hearing from them.

Gaming!
I used to be a big gamer playing World of Warcraft but now there's only a few games that I play. The Sims 4 of course, I can easily play it for hours, controlling the life of my Sims, building houses and designing new characters. Candy Crush, Cooking Fever and Hearthstone which is a spin off from World of Warcraft. The game is a turn based card game between two opponents, using constructed decks of 30 cards along with a selected hero with a unique power. Players use their limited mana crystals to play abilities or summon minions to attack the opponent, with the goal of destroying the opponent's hero.

Browsing houses for sale!
I love looking at houses for sale on websites like Zoopla or Right Move. Sometimes I will be realistic and look for houses locally that we could buy if we saved a little and sometimes I will look further afield at houses which cost millions. I can dream!

Streaming Movies and TV Shows!
When the rest of my family are watching the TV and it's not something I am interested in, one of my favourite ways to relax is by popping my headphones on and watching something off Disney+ or Netflix.

Reddit! 
I am new to reading threads on Reddit. You can go on there and read about a specific topic but I like to just go to the main page and scroll through until something grabs my attention and it really isn't long before I've lost an hour and fell down a rabbit hole of reading about Karen asking if she is the ass hole for cheating on her husband after he donated a kidney to her. Some of the threads on there are absolutely crazy and I love it!

Overcoming Seasonal Affective Disorder: Your Guide to Thriving This Autumn!

Autumn is a beautiful time of year but for many, it can also bring about a wave of sadness as summer ends. Get Moving:
Exercise is a fantastic way to boost your mood and energy levels. Autumn is perfect for outdoor activities take a brisk walk through the fallen leaves or go for a run in the crisp air. Physical activity releases endorphins which are natural mood lifters. If outdoor exercise isn’t your thing, try a fun indoor workout, yoga session or following along with a YouTube workout video can help you stay active. The key is to find something that you enjoy and can stick to, as consistency is important for mood regulation.

Stay Connected:
Social interaction is key to fighting off those autumn blues. Make an effort to connect with friends and family whether it's through a cosy coffee date, a virtual hangout, or a phone call. Engaging in meaningful conversations and shared experiences can help lift your spirits and keep loneliness at bay.

Indulge in Comfort:
Autumn is all about comfort and cosiness. Create a snug environment with warm blankets, soft sweaters, and your favourite hot drink. Lighting a few scented candles can also enhance the cosy atmosphere. Don’t forget to treat yourself to some autumnal delights like pumpkin spiced treats or hearty soups.

A new kitchen!

A couple of weeks ago Stu took a week off work, partly to celebrate Becky's birthday but mostly to decorate the kitchen. It is a job which has been on our to do list for years but we kept putting it off as it was such a big job, it was never going to be something we could get done over a weekend.

Stu painted the walls using the Crown Walls & Ceilings Teal Matt Emulsion Paint. We bought it from Wilkos while it was on offer and only paid about £15 for it and it turns out we didn't need 5L of it. We only used half of the tin but it will come in handy if we need to repaint the walls in the future.

Everything I said about not needing new lights, I take back! It is has made such a difference to the kitchen. We went from old yellow lighting to bright white LED one's. They were a faff to fit as our house is old and the wiring isn't great but Stu got there in the end with the help of Ellie the trainee electrician and some YouTube videos. When I walk into the kitchen on a morning I put the light on and have to squint my eyes as it's so bright in there. It is going to take some getting used to!

The biggest job was painting the doors from the kitchen cupboards. We did four at a time to start with. Washing them down, giving them a couple of coats of emulsion paint and then the final coat using the Quick Dry Urban Grey Furniture Paint. It came in 750ml tins and I bought 3. We only used just under two so it means we have a spare to repaint if any chips or damage happens.

We got the first 4 cupboard doors painted and they were outside drying when I thought it had started raining, turns out it wasn't rain, it was hailstones! That put a stop to our work as there just wasn't enough room in the kitchen to carry on painting more of the doors until the next day.

We gave up doing 4 at a time and took all the doors off and Stu took them into the garage to paint where there was more room and thankfully the weather was better so they were put outside to dry!

The grey paint was a lot lighter than I expected and I wasn't too sure about it but I wanted the job done and didn't want to send it back and get a darker one but it turns out now it's on, has dried and done it looks darker than I thought. It's more of an off white colour, just about verging on grey. I am happy with it!

I don't know how it is possible but the kitchen feels bigger after a lick of paint! The only thing we have removed is the moulding of wood that went below the kitchen cupboards on the before picture above, that shouldn't make that much difference. I am putting it down to the fact it's much brighter in there, the darker brown colour has gone and there is of course the new lighting!

My favourite thing in the kitchen is the shelves. They're just there to look pretty, they are not strong enough to have much put on them as the walls are not great to take the weight but where the shelves are was just wasted space so we thought we might as do something with it. All the fake plants were just one's that I had elsewhere in the house or in storage in the garage.

I say it took us a week to do, Stu did most of it and he started on the Monday, did half a day Tuesday with it being Becky's birthday, worked all day Wednesday and most of Thursday, all day Friday and half a day on Saturday. He screwed the last doors on Sunday morning, then it was done and I just had the cleaning to do and there was a lot to clean. Dust, paint splatters and lots of random screws laying around. hehehe

I am so happy with the kitchen now. It looks more modern, my dad actually thought we had got new handles for the cupboards but they are the old one's. We just gave them a good scrub. They seem to go better with the new colour. It's brighter and feels bigger. It actually feels like we have got a whole new kitchen!

Our weekly meal plan

Just a public service announcement before I get to the meal planning. Over the past few days I have had a few bloggers message me and ask if I do blogger outreach and if have messaged them. It turns out the other Kim Carberry is back again offering guest/sponsored blog posts. It started at the beginning of this year, I did blog about it when it happened and soon after the other Kim Carberry went quiet until the end of May time when they were messaging bloggers again and now they have started again as a few more bloggers have contacted me. It is not me and they have nothing to do with me. It's just the same name as me which I didn't think was actually that common. Why couldn't I just be called something common like Joanne Smith or Karen Jones then nobody would think twice about it but thank you to those who have messaged me.

Anyway onto the meal planning! Last weeks meal plan did not go to plan! I picked the meals with Gousto but it turns out I didn't do the whole checkout thing so nothing was delivered, it was all my fault! We just ate things out of the freezer. One night we had mince, onions, mash and veg, we had chicken dippers, chips and onion rings mid week and omelette another night. This week thankfully the box has been delivered so we're all good to go! 

We don't have much on this week. Becky is back at work after having almost three weeks off work using her holidays up, Ellie is of course at college and Stu is at work so it's going to be a pretty quiet week for me. It will be the first week in months where everyone is where they should be and I will be at home doing my own thing.

Tuesday - Gousto meal - Honey & Soy Beef Stir-Fry.

Friday - Pizza.

Week 38 of #Project365 15th - 21st September. A photo every day for a year!

Sunday already! This week flew over which was strange as we haven't really done anything out of the ordinary, in fact this has felt like the first real normal week that we've had since the end of July! I am finding a new routine for myself and it has been nice.

We haven't really done much over the weekend. Yesterday was the usual housework and catching up on blogging and have no plans for today. We're not even going out for lunch as we're trying to save a bit of money. With my families birthdays and redecorating the kitchen there's not much left in the pot for luxuries. It's not a complaint, we've had a good few weeks of fun and the kitchen looks amazing. (I have a blog post about it next week).

Roman Reigns a WWE wrestler. I hated this guy a few months ago when he was a bad guy, he had a break and has came back as a good guy and I am loving him again! I spent Sunday catching up on the weeks wrestling shows.

I don't usually decorate for Autumn or Halloween but I was going to B&M and Stu joked saying and don't come home with anymore Gonk's. I had to, I don't like being told what to do and this one was ever so cute. hehehe

Another pretty sunset! Every year I always get surprised how early it starts to get dark as soon as the middle of September hits.

The Smyths Toys catalogue came through my letterbox this week. My girls used to fight over it, now they are much more civilised with it. I was going to say there was nothing much in it that they wanted but they have found quite a few things.

264/365 - 20th September
Home made blackberry jam! My dad always gets given a few jars by his friend and always has too much so I ended up with a blackberry one. It is so good! I must remember to keep the jar so he can give it back.

265/365 - 21st September
Our usual meal deal for lunch. I always get the same thing, a tuna and sweetcorn sandwich, chicken satay and sweet chili sauce and orange juice.

This week my Word of the Week is: Normal!! #WotW

This week my Word of the Week is:

Normal

This week has felt like a really normal week. I have just looked back over the previous Word of the Week blog posts and it is the first normal week we've had since the 20th of July. Since then we had all the drama over the summer which is far from over but is manageable at the moment, Becky having a break away, birthdays, Stu decorating the kitchen and having a week off work but this week was normal! Stu was back at work, Ellie was at college and Becky is almost back at work. She worked a couple of shifts that she forgot to take off during her 3 weeks holidays. lol

It has been nice to get back into some sort of routine, it's not my usual one with having to still take Ellie to college and pick her up but for the time being it's our new normal. A couple of weeks ago I used bus as my Word of the Week and I swear I could write a blog post a week about the adventures I am having getting the bus to and from college. What a drama most mornings are! One morning the bus was 10 minutes late, it was a new driver who had another driver telling him where to go and how to deal with the teenagers who won't share seats on the bus. The bus nearly skidded off the road and sent people flying. Even though the bus was late it still stopped in town, while there they let an old man on in a mobility scooter. He got on and then asked what time it got to somewhere in the other direction. He then had to get off in his mobility scooter, which took time. So the bus driver sat there eating a tub of cold baked beans which looked so odd, he was shovelling them into his mouth so fast. Ellie made it to college with 4 minutes to spare. I didn't get home for coming on to 11am which was shocking considering we left the house just after half past seven. That was not a normal bus trip!

It has been nice to eat some normal meals again and being able to cook them in the kitchen which hasn't got wet paint in and everything not in it's normal place. The newly decorated kitchen is looking amazing, I have a blog post scheduled for next week with all of the photos. Stu has done a fantastic job!

Ellie was at the doctors yesterday for a repeat blood test. She had one last month after being in hospital for a few days a few months ago but they forgot to check her kidney's so she needed another blood test. They just wanted to be sure that she was healthy. I am glad to say all her blood results are back to normal, that's one less thing to worry about!

What I have loved this week! Week 38. #FridayFavourites

Happy Friday! We're so close to the weekend and I am glad! I have had a quieter week than the past few but still busier than I am used to at this time of year. It's not a bad thing though, I am enjoying being busy although some evenings I just think stuff it to my to do list. Like on Wednesday evening I was supposed to to the online grocery order but I just couldn't be bothered, I did it first thing yesterday morning and got it delivered later on in the day so it didn't knock things too far off track. 

It's Friday so I am of course linking up with Erika and Andrea to share my Friday Favourites.

What I have loved this week

Bus fun!
I am still taking Ellie to college and picking her up and every day the same people are on the bus. I think I could write a whole blog post about the random things that I have seen and heard on the bus just this week. The driver taking a break and eating a whole tub of cold baked beans was so unexpected, the new bus drivers not knowing the route, another bus breaking down and everyone getting on the bus I was on, the things teenagers talk about, rude old ladies not letting people sit in the seat beside them, the same faces every day on the bus and us old people giving looks of disbelief to each other when the teenagers do silly things.

There is nothing better than fresh flowers and they were a nice surprise. Stu went to the shop for something, milk I think and came back with these. They were on offer, reduced from their original price which made them even better! I hate paying full price for things like flowers.

Chilly mornings/Warm afternoons!
I am loving the weather here at the moment. It is so chilly here on a morning, we've had a few foggy mornings too which I really like. On a morning it's cold enough for a jacket but by lunchtime it has warmed up and feels a little bit like it's still summer but without it being too warm that I am sweating when I am out and about.

Becky's break away!
Becky came back from her break away last Friday and she had a fab time. She went to Newcastle upon Tyne for a few days with her girlfriend and they made the most of it. Hitting the shops, the nightlife, eating out and taking a visit to our favourite seaside town, Amble which I am so jealous about. They are already planning on another break away their in a couple of months.

We added some shelves in the kitchen. They're not the strongest as our walls are useless but I hadn't planned on them holding a lot of weight, it was just wasted space and I wanted pretty things on them.

Strictly Come Dancing!
Strictly returned on Saturday with 15 new celebrities taking to the dance floor. I have watched it every year for at least the last 10 years and the first show of the series this time felt different. I know the show has been hit with scandal with two professional dancers being "let go of" because of bullying claims but it hasn't stopped the show. I love all of the new contestants and they are so funny! I have never laughed so much at Strictly. I can't wait to see how Chris McCausland does with him being blind!

A family weekend!
This is going to be the first weekend in what seems like ages that we are all home together, Becky has either been working or out. We haven't got much planned apart from having some nice food and watching TV but it will be good to spend some quality time together!

Top tips to start meal planning!

Last week I shared a blog post all about why I love meal planning and it got quite long so I thought I would do a separate post with some tips when it comes to meal planning. I have been meal planning for over 10 years now and not every week goes to plan but it gives me a guide and does make my life easier!

Here are some tips to get you started with meal planning!

Start Simple!
If you’re new to meal planning don’t feel like you need to plan every meal for the week right away. Start small by planning just a few dinners or even just your weekday meals. This makes it feel less overwhelming and more manageable. You just have to pick the meals, you don't even have to decide what day you are going to eat them!

Create a List of Go To Recipes!
Having a go to list of recipes is a lifesaver when it comes to meal planning. These are meals you know how to make, love to eat and are quick and easy to prepare. Keep this list handy when you’re planning your week. It’s great to mix in one or two new recipes but having a few tried and tested options makes the process quicker and less stressful.

Pick a Planning Day!
Choose a day each week to sit down and plan your meals. For me I plan on a Thursday when I am doing the food shop so I know what to buy but you do you! Find a time that fits into your schedule and make it a weekly ritual. This helps you build the habit and before you know it meal planning will be second nature.

Keep a Running Grocery List!
As you plan your meals write down the ingredients you need. Like I said I meal plan when I am doing our online food shop so I add the things straight to the basket. This way, you’re not scrambling to remember what you need when you are in the supermarket and it helps you avoid those annoying midweek trips to pick up a forgotten item.

Batch Cooking is Your Best Friend!
If you’re making a dish that freezes well, double it, this way, you can cook once and eat twice or even more. On those busy nights when you just don’t feel like cooking you can grab something homemade from the freezer instead of resorting to a takeaway or something that you don't really want to cook or eat.

Embrace Theme Nights!
Taco Tuesday, Pasta Wednesday, Fish and chip Friday or Pizza Saturday! Theme nights are a fun way to make meal planning easier. Knowing that you’ll be making tacos every Tuesday or pasta every Wednesday takes some of the guesswork out of planning and gives you something to look forward to.

Stay Flexible - Life Happens!
One of the biggest keys to sticking with meal planning is staying flexible. Plans change, things come up, and that’s okay! If you don’t end up making a meal you planned, just shuffle things around or save it for later in the week. Don’t be too hard on yourself the goal is to make life easier, not to add stress!

Involve the Family!
Get your family involved in the meal planning process. Ask your partner and kids what they’d like to eat during the week. Not only does this take some of the pressure off you but it also makes everyone more excited about the meals you’re making.

Plan for Leftovers!
When planning your meals, consider how you can repurpose leftovers. For example, roast a chicken one night and use the leftovers for sandwiches or a curry the next day. We love to have spaghetti Bolognese one day and the next have the leftover Bolognese in wraps, messy but so tasty! This not only saves time but also cuts down on food waste. Leftovers are your meal planning secret weapon don’t underestimate them!

Make it Fun!
Lastly, remember to have fun with meal planning. It doesn’t have to be a chore. Get inspired by new recipes, involve your family in the process, and maybe even treat yourself to a new cookbook or kitchen gadget to keep things exciting. The more you enjoy the process, the more likely you are to stick with it. I struggle when I don't meal plan now.
