Our weekly meal plan! 8th - 14th May. #MealPlanningMonday

Our weekly meal plan

Last weeks meal plan went well despite me losing track of the days and cooking the soup a day early. It was OK, we just ended up swapping things around. We ate everything but didn't end up going out to eat yesterday as out favourite place for Sunday lunch was closed and I didn't fancy paying double the price for a Sunday dinner elsewhere. We ended up having sausages, mash and baked beans.

I am feeling a bit meh about cooking at the moment. The weather is being a bit silly. Looking out of the window it looks like a winters day but open the back door and your hit with a blast of heat because it's so warm. We're stuck between wanting hot comfort food because it looks cold one minute and salads the next minute. I think this week I have found a good balance between comfort food and food for the warmer weather.

I don't have much on this week, it's just a normal week for us all but Ellie starts her GCSE's. It's a nice easy start, she will have 2 days in a classroom showing off what she has learned in her photography classes over the last couple of years. Next week the proper sit down exams start. Eek!

On the menu this week we have:

Tuesday - Tuna pasta salad.
Wednesday - Pizza waffle fries. Simply waffle fries topped with pizza sauce, onions, salami, pepperoni and cheese.
Thursday - Thai-Style coconut chicken with sweet potato fries a Gousto meal that we love that we've not had in a while.
Friday - Fish fingers, chips and baked beans or Fish Finger sandwiches depending on how lazy I am feeling.
Saturday - Pizza. We might get a takeaway with it being the Eurovision song contest final night.
Sunday - A roast dinner of some sort.

What are you eating this week?

Coronation decorations! #MySundaySnapshot

One of the local craft groups did a great job of decorating our little town. There were knitted covers on the bollards and pom, poms everywhere. They looked so pretty.

A photo every day for a year! 29th April - 5th May. Week 18 of #Project365

As I am sitting here I am slowly losing my mind with the builders next door. The drilling is never ending, I went out yesterday morning just to get away from it and they were still on drilling when I got home 3 hours later. I am starting to think whoever bought it got it for the young lad to practice using a drill. It sounds stupid but they go around and drill the same walls every day, sometimes multiple times a day. How can they not be finished, they've been hammering and drilling almost every day since October!

So it's the Coronation today. I will be watching along on the TV but we don't have anything planned and then we have another bank holiday and we have nothing planned for that either. I am looking forward to another short week, I really could get used to them. hehehe

Now for a photo every day!

Pickle kit and a couple of pints
Quiche and Sloppy joe mix
Duolingo
Polling station and shoots growing

119/365 - 29th April
The kids bought a pickle kit off the TikTok shop. You wrap the pickle in the sweet fruit roll ups, stick the Taki crisps in the pickle and cover it all in the spicy candy sauce. It sounds disgusting but they ate it. Teenagers and young adults are strange!

120/365 - 30th April
Stu and I went out for lunch (the kids didn't want to come) and we stopped off at the pub for a cheeky pint. They have renovated their beer garden and it looks amazing! I can't wait for some sunny evenings to visit again.

121/365 - 1st May
Home made quiche! I had to make 2 because we all wanted different fillings. This was the ham, cheese and onion one.

122/365 - 2nd May
The Sloppy Joe mix. We had it in buns and Stu took the rest to work and had it with rice.

123/365 - 3rd May
I am loving Duolingo. Stu laughed at me saying when are you ever going to use French? Well, I got an email from the school yesterday saying that our town is doing an exchange with a French town and 25/30 families are visiting here in the summer so I might just get to use it. hehehe He's started to learn Italian.

124/365 - 4th May
We went to vote. Becky was so excited as it was her first time voting. We came out and she felt so proud of herself doing her bit.

125/365 - 5th May
There is finally things growing in my garden. I was starting to think nothing was going to after planting a couple of weeks ago.

This week my Word of the Week is: Bank Holiday! #WotW

This week my Word of the Week is:

Bank holiday
I really struggled coming up with a word for this week but I thought I would go with Bank Holiday as we've just had one and we have another on Monday. I could get used to these long bank holiday weekends. The week following a bank holiday Monday always seems to go so quickly but I am so lost with what day it is. During the week I got ahead with myself with the meal plan making Thursday's meal on the Wednesday, it didn't matter though everything was still eaten. I forgot to put the wheelie bin out, I'm glad Stu did and I have also forgotten to order our weekly food shop to be delivered today. Oops.

Stu and I had a lovely day on Sunday, it was quite relaxed as we knew we had the Bank Holiday Monday to catch up on jobs around the house as we wouldn't be going anywhere as the buses are rubbish here on a bank holiday. We went out for a Sunday lunch, the kids were invited but they didn't want to come. Hmmf. We then went to see my dad and caught him out working on his usual day off. Grr! I gave him a telling off and then an extra telling off for not resting his sore wrist. He is 75 years old and still works or tries to work like a 20 year old. He talks about retirement but I can't see that ever happening, he just needs to slow down a little. On the way back from my dad's we called into the pub for a cheeky pint, we were going to watch the football but they chose to show the I think Man City match and not the Newcastle one. Hmmf.

This week also saw Ellie have another visit to college, she didn't learn anything new but said it was nice to spend some time there on a normal college day with students there. Becky voted for the first time, she was so excited about it and felt so proud of herself for doing her bit and my girls and I are now officially hooked on I'm a Celeb after the drama with Gillian McKeith smuggling things in her knickers and the drinking trial. lol

This weekend is of course the Kings Coronation and to be honest I am sick of hearing about it. I love watching This Morning on ITV but I have just turned it off as it's Coronation this, King Charles that. I will of course be watching on the TV as it's a big piece of history but I feel like I couldn't care less. We don't have any plans for it, the kids are doing their own thing and Stu will be at work but he does get a couple of hours off taking calls in the afternoon so him and his workmates are going to go to the pub, they won't be drinking alcohol though as they have to go back to work and do an hour before they finish for the day. There are things happening locally but nothing like when it was the Platinum Jubilee. Everything seems to be aimed at people who want to sit in the pubs all day drinking or people with young families.

How has your week been? I hope you have had a good one!
