Easy Mince Pies!

If you’re in the mood for a Christmassy treat then why not try this recipe...I have used it for years to make mince pies with the kids and we always have a great time.

250g plain flour
125g butter
1 egg
1 jar of mincemeat
Icing sugar
1. First make the pastry by sifting the flour into a large mixing bowl.

2. Cut the butter into small cubes and begin rubbing into the flour until the mixture resembles breadcrumbs.

3. Next, add in cold water, 1 tbsp at a time and mix quickly.

4. When the dough is almost fully combined, remove from the bowl and gently bring into a smooth ball on a work surface.

5. Wrap the pastry dough in cling film and chill in the fridge for 30 minutes.

6. Preheat the oven to 200C/400F/Gas Mark 6.

7. After the pastry has chilled, divide the dough into a 70/30 split – the smaller ball will be used for the lids of the pies.

8. Dust your work surface with flour and gently roll out the larger portion of pastry, constantly turning, until it’s just under ½cm thick.

9. Next, using a pastry cutter, cut out the rounds of pastry and place into the baking tin and fill each pie with 1 tsp of mincemeat.

10. Then roll out the remaining pastry and cut out the lids. You can use a circular cutter or be more festive and use a star.

11. Place the lids on the pies. Seal the lids if using a full lid by crimping the edges with a fork and remember to make a small incision in the middle for steam to escape.

12. Next, beat the egg with a fork and brush a light coating over the top of the pies.

13. Bake in the oven for 20 minutes, or until the pastry is golden brown and cooked through.

 14. Eat and Enjoy!
