Last weeks meal plan went really well, in fact it went perfectly! We ate everything and on the day that I had planned too. I can't remember the last time where it all went to plan. I like being in such a good routine where I can spend time in the kitchen. I especially like days when I can cook our evening meal in the afternoon and reheat it later.
I would say my favourite meal from last week was a simple roast chicken dinner where I made my own Yorkshire Puddings, it's only taken me almost a year to get the hang of using the new oven. It was a Gousto meal but I changed things up a bit. We were supposed to have roast potatoes and mashed carrots but my family are weird and don't like mashed carrots so I did mashed potatoes and normal, cut carrots. I also added some roast parsnips and sage and onion stuffing.
I don't have much on this week apart from getting through it, nothing bad has happened but this school term always feels like such a long slog and the early mornings are wearing me out. Half term starts on Friday and I am looking forward to having a bit of a break, Ellie is too. We need to make some plans.
On the menu this week we have:
Monday - Gousto meal - Sausage & Caramelised Onion Sandwich With Chips. A quick meal and one of our favourites.
Tuesday - Gousto meal - Thyme Pork Meatballs With Creamy Mushroom Sauce.
Wednesday - Gousto meal - Lancashire-Style Lamb Hotpot With Wilted Greens. I love that my family will now eat lamb as it's only over the last year that they decided they like it.
Thursday - Gousto meal - Baked Chicken & Almond Curry With Rice And Naan. A new recipe to us, my family aren't too sure about the almonds though, we'll see.
Friday - Pizza. Maybe homemade one's.
Saturday - Chinese Style Pork Rib Steaks with salt and pepper chips.
Sunday - Mince and onions in gravy with mashed potato and veg.

I hope you enjoy the chicken and almond curry, it sounds delicious! It's definitely the time of year to start cooking stews and soups. We're having rice pudding this evening, one of my favourite wintery meals :)

Kim, your menu always sounds so delicious 😋. Those Chinese-style pork ribs sound great. Today, we're making hot dogs. We'll add some extra toppings to them. It's not quite cold here yet, but we're moving into colder temperatures soon. Then, we will make more slow-cooker meals. Have a great week!

I love it when a meal plan goes right. We are finding it difficult already and it's only Monday. I might have to try Gousto again. x
ReplyDeleteI make Shepherd's Pie quite often and I was just thinking I should change it up to a Lancashire Hot Pot.
