Our weekly meal plan

Last weeks meal plan went well, I think I have perfected my home made quiche. It is so simple to make shortcrust pastry for the base and then the filling. I think I am going to have to buy a proper quiche baking tray thingy though, I have just been using a casserole bowl lid. lol We had home made fish & chips on Friday night and I got the Harry Ramsden's chips from Iceland and they were amazing, I will be buying them again.

About half an hour before writing this blog post I finished the online food shop and I am now having to go back to it and check what we're eating this week. lol I am blaming the kids, as I was finishing the order they were shouting out that we needed random things. Doughnuts, crisps, pop, all the unhealthy stuff. I couldn't refuse getting the doughnuts though. hehehe

I am trying an interesting recipe this week: Pringles Chicken. The kids both saw it on TikTok and said I have to make it. It actually looks quite good and it's something a little different. You crush a ton of Pringles up, coat the chicken in beaten eggs and then dip them into the crushed Pringles. It said to cook them in an air fryer but we don't have one but the oven will do the same thing.

On the menu this week we have:

Monday - Honey glazed gammon, baby potatoes, carrots and broccoli.
TuesdayEasy tuna pasta.
Wednesday - Pringles chicken and potato wedges.
Friday - Pizza. We might make our own.
Saturday - Bacon & leek tart with potato salad. I recipe I have previously made from Gousto.
Sunday - A roast dinner of some sort.

  1. We quite often do chicken goujons with breadcrumbs and southern fried seasoning to coat them, but the pringles sound interesting. You can use cornflakes too
