Our weekly meal plan

These Mondays seem to be coming around quickly! Last weeks meal plan went brilliantly! We loved the mushroom pie and the tomato soup was such a treat. It was nice mid-week to have a break from cooking a proper meal and just open a tin of soup and makes some sandwiches to go with it.

This week is going to be confusing, Stu is working today instead of having his usual day off but does have a day off later in the week. It's going to make me think today is a Tuesday and his day off will feel like a Sunday or a Monday! I feel like I have just got back on track with what day it is and now I am going to be confused again.

Last week the weather did warm up a little, at least the temperature said it was higher but it didn't feel it. I couldn't bring myself to go and sort the garden out. There didn't feel much difference in temperature between 3°C and 10°C, I blame that the sun wasn't shining. Hmmf. It's set to be grey, gloomy and misty this week. It's not going to ruin my mood, I am staying positive! The January Blues are not going to get me!

On the menu this week we have:

Monday - Gousto meal - Curried Winter Veg Soup With Parsnip Crisps & Yoghurt. A new recipe for us and it sounds like a great one to start our week.
Tuesday - Gousto meal - Saucy Onion Gravy Beef Meatballs & Crushed Potatoes.
Wednesday - Gousto meal - Oven Baked Pork Belly & Winter Veg Pot Roast. I will cook this in the slow cooker instead of the oven.
Thursday - A help yourself type of tea meaning we will all have something different that we fancy. It's a good way to use random bits up out of the freezer.
Friday - Pizza.
Saturday - I am not sure yet, Stu is off work so I don't know what we have planned. We have to do something, he rarely gets a Saturday off work.
Sunday - Toad in the hole, mashed potato and veg.

  1. We woke to snow and freezing cold temps today so I put a pot of sausage/tortellini soup on for dinner. I cook the veggies and sausage and broth all day letting it simmer and then maybe a 1/2 hour before serving I add in the pasta. This week we're planning on a chicken parm. casserole dish with pasta, a night of fish/potatoes/salad, a weight watchers friendly version of tuscan chicken pasta and a hot sandwich night with chips and salad. Then over the weekend I'm hoping to plan a date night out where the boys will just fend for themselves (most likely getting take out).

  2. Hi, Kim. My husband does most of the cooking now that the kids have moved out of the house. Usually he will make a big pot of soup (in winter) and we will munch on it through out the week. In the summer, he will grill several different things and we will have left overs through out the week. Yesterday he made a big pot of potato soup with ham. Ohhh, so delicious. I do keep staples on hand. So it's quite easy to prepare something as well. I consider pasta, spaghetti sauce, Alfredo sauce,chicken broth, tuna, can of chicken, instant potato, flour, sugar and a few other items, staples.
    I like that you have the days planned out. It takes the 'chore' out of cooking!

  3. I've probably said this before but toad-in-the hole is one of my favourite meals. We are going to a carvery on Saturday as it's my first born's birthday. I'm going to drive us there!!! It's only 5 minutes away, half the distance of the Little Man's school. (I'd rather go to Wetherspoon's, it's walking distance!)
