Four ingredient gooey chocolate and raspberry brownies! - Recipe!

I think brownies might be my favourite ever sweet treat. I have said in the past if I was given a last meal on death row that they would be my dessert along with vanilla ice cream. They are something to eat in so many ways. By themselves, with cream, ice cream or even custard which Becky my teen loves which I think is rather odd. lol

The unbeatable combination of chocolate and raspberry in this gorgeously gooey brownie recipe is made with just four ingredients. Perfect for spoiling yourself and not having to buy lots of different random things.

Good quality chocolate spread combined with eggs, self raising flour and fresh raspberries which are in season at the moment give the rich brownie with a fruity kick.


INGREDIENTS

4 Eggs
400g of chocolate Spread
140g of self raising flour
150g of fresh raspberries

METHOD

1. Preheat your oven to 180˚C (160˚F, Gas Mark 4) and grease a 25cm x 20cm traybake tin.

2. Beat the eggs well until thick and creamy.

3. Weigh out the chocolate spread and place it in a heatproof bowl over a pan of water. Simmer until it starts to melt.

4. Gradually add the melted mixture into the egg. Fold in the flour then add the raspberries, being careful not to damage the raspberries by over mixing and mushing them up.

5. Pour the mixture into your tin, levelling with a spatula and bake for around 40 minutes or until it is firm to the touch.

Leave it to cool then cut into squares and then enjoy!

This is great as a quick pudding, served with ice-cream or fresh raspberries and cocoa powder. Blackberry season is here too so I am thinking about trying this recipe with them instead of raspberries.

  1. Oh, those brownies do look tasty! Not sure what I would choose as my final meal. Maybe a bowl of ice cream, or a slice of my favourite chocolate cake, Sacher Torte.
