Our Weekly meal plan

Last weeks meal plan went well until we got to the weekend. I got a big delivery from Iceland and I overbought so things had to be eaten before they went to waste. We had pizza on Friday night and then sweet & sour chicken balls, egg fried rice, spring rolls, chicken chow mein and salt and pepper chips on Saturday. On Sunday we had roast gammon, mash and veg.

I seem to have got my mojo back for cooking. Before Christmas I had no motivation to be in the kitchen or for food really but now we're into more of a routine, it's a new year and I am enjoying cooking again.

We don't have much on this week. I will mostly be trying to keep warm and keep up with my exercising. Becky is spending the night at her girlfriends mid-week. They haven't seen much of each other since Christmas because they've both been working so they are taking any chance they get to see each other and Ellie has her MRI scan on Saturday. We got a new appointment through and it is way better than the half past seven one we were offered before. It's nothing to worry about, it's just routine so she can get her hearing aids.

On the menu this week we have:

Monday - Meatloaf, veg and roast potatoes.
Tuesday - Vegetable fajitas if my family don't notice. If they do I will add chicken.
Wednesday - Chicken & bacon pasta. 
Friday - Fish, chips and mushy peas.
Saturday - Subway sandwiches, a treat after the hospital.
Sunday - A roast dinner of some sort.
