Our weekly meal plan

Last weeks meal plan went well. We did have a couple of changes, the creamy chicken, leek and potato bake ended up being creamy chicken, leek and pasta bake which worked out well as there were leftovers for the next day. Ellie had planned to take it to lunch for school but forgot and left it in the fridge, she was gutted to have to have a school lunch. The Carrot & coriander soup with mango chutney twists were bumped to Friday as I kept finding other things to do around the house instead of spending time in the kitchen but we enjoyed it and there were leftovers, some has been frozen and we enjoyed it for lunch on Saturday. It was good soup. hehehe

The highlight of our week were the Beef and Garlic En Croute's, instead of making 4 smaller one's for us I made 2 huge one's. They are so tasty and we all enjoyed them.

I don't have much planned for this week. The landlord came to measure the living room wall last week and never ended up doing the work that needs doing. He has said that he is going to wait until Stu is off work to put the insulated plasterboards up on the walls. I am totally fine with that, I hate having people in the house working and just sitting there like a spare part. Stu is going to have a busy week in a few weeks. He has that to help with and he is planning on decorating Ellie's bedroom too.

On the menu this week we have:

Monday - Battered beef burgers with chips and gravy. I found them in Farm Foods before Christmas and actually forgot they were still in the freezer.
Tuesday - Sausage, apple and potato tray bake.
Wednesday - Pea and ham soup with crusty bread. I only realised the other day that you can buy Ham stock cubes so I am planning to use them instead of vegetable stock cubes.
Friday - Fish, chips and mushy peas.
Saturday - Chicken fajitas.
Sunday - A roast dinner of some sort.

  1. Oh what a nightmare with all that work need doing. We have a lot to do in ours too. Starting with a teen bedroom. So far we have fish and chips and some sort of roast on the menu. Prob pork again as it’s cheap and pork chops another night - as we have them in the freezer

  2. I didn't know you could buy ham stock cubes! We love pea and ham soup. I bet the stock gives it the perfect flavour :)

  3. Oh the Beef and Garlic En Croute's look amazing! I got the idea for the recipe from of your posts originally. They taste amazing don't they!
    Oh it sounds like you will be busy with your decorating, hope it all goes well. I've just swapped our two rooms downstairs and it took me ages to tidy everything up and find a place for it all. xx
