Our weekly meal plan

Last weeks meal plan went well. I cooked the meals which took the most effort at the start of the week while I had the motivation and then the easy meals towards the end of the week and it worked out well especially since Stu had Friday, Saturday and Sunday off work. He doesn't usually get that much time off work but they know he can't get in on Bank Holidays because of the rubbish bus service here. He did work an extra day last week to make up for it and then they messed up putting an extra holiday in for Stu so it worked out well for us.

We had a nice Easter weekend, we didn't do much apart from gardening, sorting the garage out and of course eating plenty of chocolate. How is it chocolate always tastes better in egg form? It was nice to have some family time and even better to have Stu and Ellie off work for a few days at the same time. We don't have much on this week. Stu is back at work tomorrow and Becky is working her normal shifts so it will be just me and Ellie although later in the week the girls are going to the cinema to see the latest Super Mario Bros film and I have to nip into town to get a birthday present for someone.

On the menu this week we have:

Panackelty - A North East dish made up of layers of meat and vegetables, including potatoes, onions, carrots and corned beef.

Chicken fajitas. One of our favourite meals to eat together as a family.

Sausage pasta - Nice and simple! We will have it with garlic bread.

The kids have both said they want a salad. So we'll be having one. Lettuce, tomatoes, cucumber, pickles, beetroot, hard boiled eggs, new potatoes and ham.

Loaded beef chilli cheese fries - This meal seems like such a Saturday night tea for sitting in front of the TV.

Pizza - Just frozen one's.

Fish fingers, chips and baked beans - Such a kiddy meal but it's still so good.

  1. I have never heard of panackelty but anything with meat and potatoes sounds fantastic!

  2. Meal plan looks delicious, I think I would love the Panackelty but Carys is fussy so probably wouldnt eat the corned beef. My meal plan is up on the blog.
