Our weekly meal plan

And relax! We have had a busy time over the last week or so with a night out, the nearby country show and Ellie's prom. I haven't been in the mood for cooking or even meal planning really but this week feels calmer and like I can get back on top of things. My head was all over the place last week that it got to Friday, our usual day when the food shop is delivered and realised that I hadn't even ordered it. Oops. Sainsbury's had delivery slots left so I got it delivered on Saturday. Phew!

Last weeks meal plan was a bit hit and miss, mostly miss. lol. After being at the show all weekend I didn't feel like cooking but wanted more than hot dogs in buns on Monday so Stu cooked the sausages and made some mashed potato which we had with baked beans, it was perfect. On Thursday Ellie's prom day Becky had a good idea of getting pasties from Greggs which worked out well because there was no time for cooking and we ended up having a chip shop tea on Friday because prom's are exhausting and we needed a lazy day. On Saturday I forgot about the fake KFC I had planned and we had burgers in buns. I am blaming the fact that I had to rush the shopping order.

This week is going to be a normal week, we don't have anything on at all. Becky and Stu are of course working but Ellie and I are at a loose end. We might get some things done that we've been planning to do since Christmas. lol

On the menu this week we have:

Monday - Meat free mince sloppy joes with potato salad. It's a Gousto meal but one of our favourites which we've had several times.
Tuesday - Pork stir fry, spring rolls and prawn crackers.
Wednesday - Pea and Ham soup. It's Ellie's request and she will be learning how to make it.
Thursday - Chicken goujons and salad in wraps..
Friday - Fish, chips and mushy peas. Home made this time.
Saturday - Pizza.
Sunday - A roast dinner of some sort.

  1. I tried a few times poke bowls at restaurants and loved it, so now I'm making it at home quite often. Even today I made a poke bowl: quinoa grains (from package, heated in the microwave 2 minutes), a tomato, spinach mix (spinach can + tahini + spices + garlic), pickles, hot pepper (pickled), some fried salami (vegan, as we're both vegan), and some tahini drizzled on top. It's so good and every time I make it with other stuff, it's so worth trying. Also, I used canned and ready cooked grains (rice, quinoa). It is ready to serve in 5 minutes or so.

  2. My meal planning has gone out of the widow completely! I'll have to get my act together soon, especially when I go back to work next week. Which I'm not really looking forward to!

  3. You did have a busy week bless! It times like those where my meal planning goes pear shaped! Hehe.
    Love your meals for this week. I'm going to have to try the pea and ham soup, I reckon my lot would really like that.
    The chicken goujons and salad in wraps are yummy. We have the same but I use chicken burgers sliced up. xx
