Our weekly meal plan

Last weeks meal plan went okayish. I messed up and got the meatballs out of the freezer a day early so we had the meatballs and spaghetti a day early then the meatball sub melts on the Thursday which meant there was no easy tea to have on Friday night. Thankfully we had a big brunch, a breakfast at our favourite cafe so we weren't that hungry and I was all set to make tea when the Foo Fighters came on as a surprise guest at the Glastonbury Festival that we were watching on the TV so Becky ended up making us pasta.

We don't have much on this week, until we get to the weekend. Becky has her friend staying over and we're going to a nearby country show on Saturday and Sunday. One of the first weekends that we moved here the show was on and we really enjoyed it, Ellie and I went last year as Stu and Becky were at work on the Saturday. This time they have both booked time off work so we can have a fun couple of days, I would say together but Ellie has plans to be with her friends and Becky too. 

On the menu this week we have:

Tuesday - Mango coconut & lime chicken mini fillets with some sort of noodles.
WednesdayQuiche and salad. I am going to teach Ellie how to make quiche, she has said that she wants to learn to cook more.
Friday - We're going out for a meal.
Saturday - At the show, we're taking a picnic so I'm going to put sausages in the slow cooker, I don't know what with yet.
Sunday - At the show but this time we will be buying food there. If anything like previous years Ellie will have noodles, Becky burgers and Stu and I pork and apple burgers plus doughnuts, ice cream and lots of treats. I don't think we'll want much on the evening.

  1. It sounds like an exciting week. We are going out for a meal on Friday as it's my daughter's birthday. Graham is singing in the choir at the festival on Saturday and I'm hoping to go, but two days in a row is always a struggle for me. I like the sound of your tuna, butterbean and pepper salad, yum!

  2. I just finished making a quiche and I see that you have it on the menu for Wednesday, nice! Enjoy your weekend at the show, sounds like it will be a lot of fun. We have the annual Royal Easter show over here but I haven't been in a few years. It's a huge agricultural show that goes for a couple of weeks. My mum and I used to go together, she looked forward to the show so much. So many nice memories!

  3. We're eating shrimp and chicken kabobs tonight, we have burgers on the menu for one night this week as well as chicken fajitas and smoked pork tenderloins with baked potatoes and broccoli.

  5. Oh I loved watching the Foo Fighters, they were brilliant. There was some really good sets this year.
    Love your meal plan. The slow cooker beef coconut curry sounds amazing! Let me know how you get on with it, I might try that.
    Quiche and salad is really nice on these hot days. Hope Ellie enjoys making hers.xx
